This enzyme catalyses the following chemical reaction Phenylalanine N-monooxygenase is a heme-thiolate protein (P-450). It is part of the pathway in plants which converts phenylalanine to the glucosinolate, glucotropaeolin, which contributes to the characteristic flavor of brassicas.
