In enzymology, a neoxanthin synthase is an enzyme that catalyzes the chemical reaction: Hence, this enzyme has one substrate, violaxanthin, and one product, neoxanthin. This enzyme belongs to the family of isomerases, specifically a class of other intramolecular oxidoreductases.
