The enzyme cutinase is a member of the hydrolase family. It catalyzes the following reaction: R 1 COOR 2 + H 2 O ⟶ R 1 COOH + R 2 OH In biological systems, the reactant carboxylic ester is a constituent of the cutin polymer, and the hydrolysis of cutin results in the formation of alcohol and carboxylic acid monomer products.
