The enzyme cholinesterase catalyses the hydrolysis of choline-based esters: Several of these serve as neurotransmitters. Thus, it is either of two enzymes that catalyze the hydrolysis of these cholinergic neurotransmitters, such as breaking acetylcholine into choline and acetic acid.
